DEM for Delta-Sigma modulators?

Take a look at: Yves Geerts et al., Design of Multi-Bit Delta-Sigma A/D Converters, Kluwer.

Kofi Makinwa at Univ. of Delft has done some interesting work in precision Temperature sensors.

The basics for chopper amplifiers you can find them in "Circuit techniques for reducing the opamp imperfections"
C. Enz.
Proceedings of the IEEE, VOL.84 No 11, Novemember 1996

This should be your starting point.
