Here are some papers that are available on the net that you might find interesting:
1) BEHAVIORAL MODELING AND SIMULATIONS OF DATA CONVERTERS Discussing implementing Data Converter models in MATLAB and there are some additional papers reference in the Bibliography
2) There are also set of presentations discussing Pipeline ADC Design and presenting many of the important equations required for correct modeling.

In general, the issue is not implementing a model in a tool. You can implement a model in any number of tools Matlab, Verilog-AMS, VHDL-AMS, VHDL, Quick Basic. The challenge is deriving the relationships between block performace and system level performance.
