In the Cadence Symbol Editing, how to change the line from green to white?

The green lines in the Cadence Symbol Editor are drawn on the
system layer purpose pair (lpp) 'device drawing', which is assigned to
the display packet 'green' in the technology file.

If you want to change the color of them you have to assign a other
display packet to 'device drawing' lpp in your technology file.
But this changes the color appearance of every shape drawn with the
lpp 'device drawing' no mater if it is for symbols,
schematics or layouts.

No other way around this!
Have a look at:
http://sourcelink.cadence.com/docs/db/kdb/2004/Aug/11150798.html
For what reason do you need white lines?

instead of Add->Shape you can use Add->Note->Shape (or shortcut n) to get white.

what's wrong with green anyway ? its looks rather nice.

If you want to have a sheet surrounding you schematic, there are sample
libraries in the Cadence DFII installation directory, have a look at
<install_dir>/tools/dfII/samples/cdslib/sheets
