How does one plot the on resistance of a bootstrapped switch ?

You probably want 1/GDS of the transistor. You'll need to provide more information (eg, what simulator?) if you need more help than that.

Connect one side of switch to DC voltage source. Then connect a current source across the switch with mag=1. Assure the switch is turned on. Perform an fixed-frequency AC analysis while sweeping the voltage of the DC course. Plot the voltage across the switch. The magnitude will equal the switch resistance.
